Delicate little desserts, as light, airy, and elegant as a ballerina in a white tutu. Crisp on the outside and soft on the inside, the meringue is topped with whipped cream and fresh berries — a perfect balance of textures and flavors
4 egg whites
1 cup sugar (250 g)
a pinch of salt
1 tsp vinegar
2 tsp cornstarch
1 cup heavy cream (35%)
1/3 cup sugar (80 g)
fresh berries or fruit
Beat the egg whites with a pinch of salt until foamy, gradually adding the sugar
Add cornstarch and vinegar and beat for another 1 minute
Pipe or spoon the meringue onto parchment paper, forming small nests about 5 cm (2 inches) in diameter, slightly indenting the centers
Bake in a preheated oven at 150°C (300°F) for 20 minutes, then reduce the temperature to 130°C (265°F) and bake for another 45 minutes
*Do not open the oven and leave the meringues inside overnight
Cream
Whip the cream with sugar and spoon it into the meringue nests
Top with fresh berries and fruits and serve
