Flaky puff pastry and plenty of gooey cheese filling make this an easy homemade version of lazy khachapuri that comes together quickly and always turns out delicious. It is especially good served warm, straight from the oven
1 package puff pastry (450 g)
500 g cottage cheese
150 g marble cheese
1 egg
Roll out the puff pastry into two rectangles, approximately 30 × 40 cm (12 × 16 inches), about 2–3 mm thick
Separate the egg white from the yolk
Lightly beat the egg white with a fork and set the yolk aside
Grate the cheese
Mix the cottage cheese with the egg white and grated cheese
Place the first sheet of pastry onto a baking tray
Spread the filling evenly over the pastry, leaving about 2 cm around the edges
Cover with the second sheet of pastry, seal the edges, and prick the top with a fork in several places
Bake in a preheated oven at 180°C (350°F) for 20 minutes
Remove from the oven, brush with the egg yolk using a pastry brush, and return to the oven for another 10 minutes
Slice into portions and serve warm
