A simple and delicious savory pastry pie with a soft cheesy filling and flaky crust. I often use this braided shaping method for pies with different fillings — it looks beautiful and works especially well with puff pastry
1 package puff pastry (500 g)
500 g farmer’s cheese
100 g feta cheese
1 egg white
1 package frozen spinach (300 g)
salt, pepper, garlic powder
1 egg yolk + 1 tsp milk for brushing
sesame seeds (optional)
Thaw the spinach and squeeze out all excess liquid
Blend the farmer’s cheese, feta, egg white, and spinach until smooth
Season with salt, pepper, and garlic powder to taste
Roll out the puff pastry into 2 rectangles
Spread the filling onto each rectangle
Cut the sides of the pastry into strips, as shown in the photo, and braid them over the filling
7. Mix the egg yolk with milk and brush over the pies
8. Sprinkle with sesame seeds if desired
9. Bake in a preheated oven at 180°C (350°F) until golden brown, about 25–30 minutes
