Have you tried making these magic custard squares? This was my first time — and it really does feel like kitchen magic. From one simple, liquid batter, three distinct layers form as it bakes: a soft, delicate top, a light, airy middle, and a creamy custard base. Minimal effort, but such an impressive result
4 eggs
3/4 cup sugar (190 g)
1 tsp vanilla
1/2 cup melted butter (113 g)
3/4 cup flour (90 g)
2 cups warm milk (480 ml)
powdered sugar for dusting
Separate the egg whites from the yolks
Beat the egg whites until stiff peaks form
In a separate bowl, beat the yolks with sugar
Reduce mixer speed and, while mixing, add melted butter, then flour, then milk
Gently fold in the egg whites
The batter will be thin and slightly lumpy — this is normal
Bake in a preheated oven at 180°C (350°F) for 45 minutes
The pastry is ready when the top and edges are nicely golden
Let cool, dust with powdered sugar, and cut into squares
