250 g pasta
For the sauce
40 g butter
1 tbsp (heaping) flour
2.5 cups warm milk (600 ml)
150 g mild cheddar cheese
a pinch of salt
a pinch of nutmeg
Cook the pasta in salted water until done
Grate the cheese using a coarse grater
Melt the butter in a pan over low heat
Add the flour, stirring constantly
Gradually pour in the warm milk, whisking continuously until the sauce thickens (~5 minutes)
Add salt and nutmeg
Add the cheese, remove from heat, and stir until fully melted
Pour the cheese sauce over the cooked pasta and mix well
